Zone Diet Mock Deviled Eggs

Ingredients:
  • 1/8 cup drained low-fat cottage cheese (1/2 block protein)
  • 1 egg white (1/2 block protein)
  • 1 teaspoon mustard
  • 1 teaspoon light mayonnaise (1 block fat)
  • Low sodium soy sauce, to taste
  • Dill or other favorite herbs to taste
  • 1/2 apple or orange (1 block carb) served on the side

Directions:

  • In a food processor, spoon the cottage cheese, mustard, mayonnaise, and herbs.

  • Hard boil egg. To serve, peel an egg, discard yolk and spread with filling.

For a snack, use 1 egg white, spread with 1/8 cup of the cottage cheese mixture. Or make it two blocks with two egg whites and 1/4 cup of cottage cheese.
