Zone Diet Summer's End Vegetables

  • 1 1/2 cup chopped onions (1C)
  • 2 1/2 chopped peppers (1C)
  • 2 small zucchinis, trimmed and cubed (1C)
  • 1 eggplant, trimmed and cubed (2C)
  • 4 ripe tomatoes, cut in chunks (1C)
  • 4 garlic cloves, minced
  • 1/2 cup basil leaves
  • 2 teaspoons olive oil (6F)


  • Sauté the onions in oil in large Dutch oven.

  • Add ingredients in the order listed letting each one cook a bit before adding the next.

  • Simmer for about 1 hour (or more), add basil and garlic about 15 minutes before the end of cooking time.

  • This is a variable recipe. You can add more of any ingredient.

  • Serve this delicious vegetable mixture with 6 oz chicken or 9 oz. fish for two servings of 3-block meals.
